i decided this morning to try out a local place for breakfast. i’ve been to melinda’s fir lunch before and like it a lot. i had always wanted to come back for breakfast. on my friday off, i made the trip over. it’s not that far for me, actually. in the shopping center on hill behind burger king and starbucks (on cedar bluff) is where this little restaurant is nestled. the food is very good and the style is what you might find at a diner, but when you realize melinda is from south africa, “country” is the same as cracker barrel.

the items on the menu you’d recognize, but it really is more of a home-cooked meal than you’ll find anywhere outside of home. this morning’s breakfast was very good. light and fluffy pancakes, eggs, toast, and bacon…all very good. (the bacon passes my approval with flying colors, for what that’s worth.) but the signature item for me was the hashbrown casserole. i am not a huge fan of this item anywhere. i mean, fried potatoes taste the same no matter who cooks them, right? not these. i really enjoyed the flavor of these. can’t put my finger on the distinguishing ingredient, but i liked them!

melinda is a cheerful hostess who welcomes you when you walk in. i like the accent, of course, since it’s a familiar one to me. the place is a quiet getaway if that’s what you want to start your day. you can visit her facebook page for more information: http://facebook.com/MelindasCountryKitchen

aporkalypse

i have received quite a few links recently regarding the predicted bacon shortage of 2013. i have been advised to start stocking up, which is always good advice. i even have been accused of being part of the problem, about which i have no beef (pun intended).

some on twitter recently termed this catastrophe as “aporkalypse.” well tagged, i say. if this shortage is indeed our future reality, stocking up is the best plan you can have.

i have been stocking up bacon for the zombie apocalypse, which could break out at any time. i don’t need to word paint the picture of zombies overrunning the planet and having zero bacon while trying to survive.

even if you don’t believe in the possibility of a zombie apocalypse, who doesn’t have some bacon in their house? if your pantry has pancake mix and/or your fridge has eggs, then breakfast is imminent. and you know that calls for bacon! wutup?

so, you have been warned. plan now, bacon later.

every so often, the guys down stairs at the kns whip up some breakfast.  this morning was one of those “oftens.”  bacon, eggs, sausage, biscuits, waffles, pancakes, cheesy potatos, and bacon.  it was a good morning.  and now i have lunch, since there were leftovers.  wanna see?  check out a few shots.  (thanks, jim and don!)

it took me a while to get up and get moving this morning.  well, not quite moving that much yet.  i feel so tired still.  but i was able to finally rouse myself after benig awake for two hours to make some breakfast of some blueberry/cranberry pancakes, eggs (over medium), and bacon.  i fired up the griddle and made the morning goodness.

the time change this evening will take its toll on me if i don’t get to bed rather early.  here is where planning ahead is key.
